I'm not sure if i'm posting in the right section. Mods,feel free to move if not 
I have eight or nine jerusalem artichoke plants, the leaves are dying off and we have had a frost, is it ok to dig them up now? or do i leave them a little longer?
I have never tried these before but i do know to have the windows open after eating them. 
I hope we like them as the plants are dotted all over the place in a bit of the garden that looks onto my neighbours conservatory (sp)

Mandy served us a Jerusulem Artichoke, Pumpkin and Parsnip soup the other night; I damn near blew the windows out.

I know what you mean about that one Gareth I made pumpkin and stilton soup,it was good but it rated about a 9 on the fartometer.
