My dear old Mum used to make lemon curd using a recipe from her Microwave cook book....it was simple and delicious. Unfortunately I cant find the book to pass on the said recipe!!!!!
 
    Mum used her microwave EVERY day.  At one point apart from a toaster it was her only form of cooking.....her choice.
