I made Cornbread for the first time yesterday, it was so simple and easy to do, and so tasty to eat, I thought that I would share it with you all.
Dry ingredients:
4 oz corn meal (Polenta) .... Fashionably expensive in the supermarkets and health food shops, but only 60p per KG for a top quality brand on the market and in the ethnic shops.
4 oz Plain flour.
1 oz Sugar.
1 Teaspoon Salt.
1-2 Teaspoon baking powder.
Wet ingredients:
7.5 fl oz milk.
2.5 fl oz vegetable oil (we used extra virgin olive oil).
1 egg.
Combine and mix throughly all the dry ingredients in a bowl.
Combine all the wet ingredients in another bowl.
Then mix the wet into the dry throughly, turn out into an 8 X 8 tin, and allow to stand for 15-20 minutes.
Bake in a preheated oven at 400 degrees for about 20 minutes.
