What a couple of days - with photo update

Cut a load of hedgerow down this morning & collected a trailer full of a couple of tons wood chippings to spread out in the pig paddock entrance & the gap between our two fields which gets a bit mucky in the winter.

Carol & our neighbour are with the slaughter-man right now bagging up joints as he butchers the two pigs he finished on Tuesday. Neighbour will take what she wants & pay back with lamb when they next have a slaughter so it works well with Carol assisting the weighing, bagging & tagging at their place when its their turn.

Tomorrow I'm mincing & sausage making with the 35- 40lb or so I've asked him to set aside. I've also got 10 ton of stone being delivered first thing to spread out in the field entrance that I recently dug out & the rayburn is being serviced at 9.30 am.

Saturday is turning the heads to brawn but Friday evening is beer & a cigar!!!

That's a hard shift but I see you got your priorities right

I'm feeling worn out just thinking about it.

I need that beer now - 42lb of sausages made up, 8lb of sausage meat & 10 tonne of hard-core later, the rayburn is serviced and the quartered heads are in a pan on it ready to start cooking in the morning when the timer comes on.

Two smashing jobs done there.

What seasoning have you put into your sausage?

Welsh Dragon - which is effectively apple and chilli & we used cider rather than water when mixing.
