Spinach BurgersRob has had his eye on this recipe for a while and made them today - they were really nice, tasty and filling. We shall make more and freeze some as well next time
1 tbspn olive oil and extra for frying.
2 onions peeled and finally chopped
225g bag of baby leaf spinach
150g mature grated cheese
Freshly ground black pepper
2-3 tbsp seasoned plain flour
Serve in bread rolls with salad and either ketchup or mango chutney
Heat the oil and gently fry the onion for 5 minutes and put into a bowl.
Add the spinach to the onions with the breadcrumbs, cheese and pepper.
Add the eggs and mix together with your hands.
Flour your hands and divide mixture into 8 burgers. Put the flour into a bowl and season. Dip the burgers into the flour to coat.
Chill for 15-30 minutes until firm.
Heat the oil in a frying pan and fry the burgers for 3-4 minutes on each side or until golden.
