Spicy Cucumber & Spring Onion Salad (a la Gok Wan)

Found this in a magazine recently and it really is delicious, perfect served with cold meats or a Chinese meal.

1 clove garlic
2/3 spring onions
1 fresh red chilli
3 tbsp rice vinegar
1 tsp sesame oil
1 tsp fish sauce
1 tsp light soy sauce
1 tsp castor sugar
pinch of salt

Finely chop your garlic, red chilli and spring onions and put into a bowl.  Peel your cucumber, quarter it lengthwise and scoop out (and discard) the seeds.  Slice your cucumber on the diagonal and add this to the bowl.

In a jug/bowl, mix the rest of the ingredients together and whisk into a dressing.  Pour over the cucumber bits and stir to combine.  Leave to stand for a couple of minutes (in the fridge) then serve.

It would seem so  

He has a series starting at 8.30pm tomorrow night on Channel 4.  Apparently when he was growing up he helped out in his Father's Chinese restaurant in Leicestershire.  I'll watch the first one to see if it's any good.

From the info from his book, it should be worth it as by all accounts he was a real fat c**t as a kid - not a bad advert for a cook book IMHO.
