Self Pity Meatballs

This is a recipe sent to me by the mother of a good friend, so I will attribute this recipe to Mrs Almond of Attleborough, Norfolk. Lois cooked this for me for dinner this evening, and it is a wonderful blend of tastes to brighten up a miserable day.

Serves two.

Ingredients:

1/2lb Minced Beef.

4oz Tomato Juice

4oz Tomato Ketchup

1 Table spoon Redcurrant Jelly

1 Dessert spoon Lemon Juice

1/2 teaspoon English mustard

Method:

Roll the mince into Walnut size balls.

In a Saucepan/sautee pan: Add all the other ingredients except the Lemon juice to the pan. Heat gently until just simmering, carefully add the Meat balls, and cook slowly over a low heat for at least 40 minutes. Before serving add the Lemon juice to taste. There is no need to add either Salt or Pepper to this recipe ..... it is already in the Tomato Ketchup.

Sounds and looks great, what is red currant jelly??

is as it says sod    a condiment made from redcurrants   like blackcurrants or white     but red  often used as an accompaniment to cold cuts and pies etc or as an addition to a gravy or sauce giving a velvety texture and sweet tang

Ladyslip thank you I've only had sweet black/red currant jams so that sounds much better with a tang

Would craberry sauce work instead of the redcurrant jelly do you think - if so it will be on the menu for tea tonight

We've just had meatballs in tomato sauce with 4 foot long spaghetti that we bought at the weeked
it's certainly a recipe that we will use again

I see can no reason that why other fruit based sauces or jellies would not work.


I fancy making some Pork meat balls & Spaghetti using an Apple & Mint Jelly that we have.

We had apple and rosehip jelly but I thought that I had better use the cranberry for the first attempt

This has fast become a favourite here and there is a HUGE bowl of it in the fridge that I made last night to start to feed the hordes that are descending on us from this evening

I'll be giving this a go sounds like my kind of food    Why do people think it's difficult? Although as I once said to a care assistant, I'm sure you find your job hard work. If you found it easy you'd have the potential to become a nurse. LoL

When make my meatballs at work I use an ice cream scoop to do the first measure then cut the balls into quarters and roll them, they are smaller than gareths, about the size of a sweet chestnut or acorn but I find them much easier to fit on a fork lol.
