pumpkin and stilton soup

A variation on a couple of the pumpkin and cheese soup recipes in the OTG recipe book.

One large pumkin or 1kg
2 tablespoons extra virgin olive oil
2 garlic cloves
1 rosemary sprig.
Salt and black pepper.
Litre of chicken or veg stock.
250g stilton.


Take a baking tray add the pumkin,cloves,rosemary and s&p.

Coat the mix with the olive oil and roast for 25 mins or until the pumkin caramelises at 220*/gas 7.


Once cooked remove the garlic and the sprig.

Decant the the pumkin into a large pan and add the stock then bubble away for 5 to 10 mins.

Puree the soup add the crumbled stilton.

Check for seasoning.
