North Staffordshire. Our local fish and chip shop was called 'Fradleys'. Mr Fradley made his own home made steak and mushroom pies for the shop. He had a nasty habit of dribbling in his chips as he served you ( from his mouth I'd better add ) and presumably, he did the same when making his pies but who cares ?   They were fantastic, especially when they'd soaked in some of his famous 'dribble' gravey.
Its got to be 40years ago since I had one of those pies.   When he sold his chip shop to Jimmy Wong, he sold part of my heritage with it and the Fradley Pie, sadly became extinct.

You forgot the tripe

Aye, tripe and onions boiled in milk and thickened with flour, with a thick piece of buttered bread., potted beef, thats right, with lumps of clarified butter forming a crust, and chitterlings, eh, boiled warm with mustard on., pork dripping on bread wi loads of salt (I preferred the jelley underneath)
I'm putting pounds on thinking of it all

Still get potted meat here mate   'Hough', we call it though (pronounced 'hoch') Lovely stuff! The jelly our local butcher produces with his is fantastic   'Cresta' I could go a long way wihtout seeing again though...............I still remember feeling my teeth get furry after a mouthful of their cream soda

When you manage to get up for the weekend I'll make sure you get some rind on yer bacon too..................& if I shake that bdooly useless 'pet' bantam of Jo's hard enough, I might be able to rattle an egg out of it too

Mushy peas!
Before the advent of the polystyrene tray, you took your own basin, covered with a clean tea towel, down the chippy and they dished straight into that - chips in first, peas on top.
Then you ran home
