making chorizo

Hi all this is my first post on this fantastic forum & this may have been posted already but Iím going to ask anyway.

Just last month I made my very first batch of biltong that me and friends are very happy eating, all the information I got for http://www.biltongbox.com/  very good website, anyway I would love to have a go at making chorizo but I had never made sausages before is there a ďbeginners guide/step by step for making chorizo.

There is a sausage making forum sausagemaking.org I think is the address though if you google it you will find it.

The community there have posted lots of advice, tips and recipes. Thanks to them my own sausage making is coming on in leaps and bounds.

Hugh Fearnsly Whittingstall also has a recipe for chorizo in his 'Meat Book'. He recommends the ratio of salt to meat then encourages you to experiment with other ingriedients. Sadly I can never seem to get the wine into the sausage.

Over this month (15th) Iím going to be getting my self a sausage making kit, I have nether made sausages before so any help you can give me would be most helpful.

This is what Iím thinking of getting.

Now what extra equipment/ ingredients would I need to make salami & Chorizo?

They do sale salami & Chorizo kits BUT if I had the sausage making kit all I would need is the Hog casings, LS25 Starter Culture, seasonings to make salami & Chorizo?

I just got a pack of their chorizo seasoning for cureing and I use their hog casings for sausages anyway so i had them in the fridge.
I found the mix a little lacking on the salt side for my tastes even though it said it didnt need any added so next time I will probably chuck somre in
