Lemon & Tarragon Vinegar

Lemon & Tarragon Vinegar.

This one of our favourites for adding to fish; both white and oily, rolling par boiled potatoes in before roasting, and for blending with a little Olive oil to make a salad dressing.

I made a batch this afternoon, and although it has not been strained and bottled yet, I thought I would post up our recipe.

30 grams dried and shredded Tarragon leaves.

425 grams clear Honey (1 jar of Asda rollback Honey yet again).

75 grams White Granulated Sugar.

1 gram freshly ground Sea Salt.

1 Lemon ~~ Zested & Juiced

500 ml white Wine Vinegar

500 ml Lemon juice.

Place all the ingredients into a saucepan, bring to the boil, and turn down to a gentle simmer for 30 minutes. Allow to stand and cool (overnight), strain and bottle.
