Help with Setter

We have an 11 month old Gordon Setter, she is a beautiful dog and mostly fairly good, does not bother Ducks, sheep etc, but let her see a hen and she looses all control, chases it and is impossible to recall or control at all. Any hints for helping to stop this behaviour? Ive trained springers, labs etc. but never had this problem and am a bit lost for inspiration.
conundrum

Gordon Setters, can be a bit headstrong to say the least.....lol  I would take her right back to basics (patience is the key) and have a chicken wrangler handy to help.  Teach her a "watch me" command, and when the chickens are about to be brought forth, ask her to watch me, and give her an appropriate treat for doing so, this can take a while especially once the have discovered the joys of a chicken holding up it's frilly knickers and running like h*&ll!  This is a pretty solid way to help, but it will take as long as it takes,

I don't normally stuff dogs full of treats while I am training, but in this case the reward has to be, in the dogs opinion, as good as, or better than,  the crime..lol.

Sounds like a good idea to try. Off to the shops for some doggy treats!
