Dry curing bacon?

The internet can be a wonderful place. Over the last few days I've had a little bit of a mild panic and that's because I've realised that some how, I've managed to acquire quite a few pigs.   I've been wondering what I could possibly do with so many and the thought 'bacon' has come into my head, so a quick Google has produced this gaggle of recipes.

I think you'll agree that the recipes are pretty simple  and straight forward.

Now all I need to do, is to find out how to make one  of those big sides of bacon that in the old days' used to hang in the butchers shops for what seemed like forever and a day. It certainly tasted better than the pale replica of bacon that we get from the shops and supermarkets today.

Yes we keep saying that about bacon here and the hams used to taste better too, now they just inject them to cure them. The guy that does ours smakes them but some just paint stuff on and heat boy can you taste the difference

I've got a cold smoker that I made by strapping two 50 gallon oil drums on top of each other.
A few weeks ago, I cold smoked some of the bacon that we had back from the butcher off Prudence the GOS sow. Karen doesn't like any smoked food but I do and it tasted terrific. Unfortunately, I haven't got anything like the facilities for doing bacon commercially, so I'll only be able to do bacon for friends and family.

Pm debbie for her bacon cure and methods, she processes loads of pigs so has a stack of recipes and products from the humble porker.
My aim is one day to have time to join her on wone of her weekend pig courses and learn from a master lol.
