Cranberry Vinegar - a really simple recipe

12oz bag of cranberries
3/4 cup distilled white vinegar
3/4 cup white sugar
3 cinnamon sticks

Put all of the above in a saucepan and bring to the boil.  Reduce heat and allow to simmer for 5 minutes or until the cranberries have "popped" their skins.  Pour this mixture into a sieve over a jug or bowl and allow to drip.  Don't push the mixture through the sieve or your vinegar will be too thick/cloudy.  When cool, decant the liquid into a nice bottle, label and you have a nice Christmas pressie.  This will last for months in the larder and if it does become a bit too "gloopy" just stir through a little more vinegar.

Quantities can be multiplied up and cooking time stays the same.

Try it, it's delicious and such a wonderful festive colour.

what do you use if for Mrs WW?

It's the first time I've made it but I'm guessing it'd be nice mixed with EVOO to make a salad dressing, used in hot dishes where you'd maybe use a dash of balsamic vinegar, sweet & sour dressings.  It certainly smells nice and after a quick taster, I can confirm it tastes delicious.  Would be nice in a venison casserole I think.
