Given that these never freeze well, I would love to hear others' favorite courgette glut ideas and recipes.

I am cannng a LOT of this right now, it is so very tasty and we have an absolute glut of them this year.

Spicy Zucchini relish.
6lb Zucchini (Courgette)
12 sweet red peppers.
1/2 cup of pickling salt
6 3/4 cups granulated sugar
2 1/2 tbsp. dry mustard
2 1/2 tsp celery seeds
1 1/4tsp ground ginger
1 1/4tsp turmeric
2tsp hot pepper flakes
2 1/2tbsp cornstarch.
7tbsp water


Shred Zucchini. add chopped and diced (small) onions and peppers. Transfer to large stainless or glass bowl and add the salt, mix well. Let stand for an hour, mix occasionally. Drain well, rinse and drain again, pressing out liquid.  In large heavy saucepan, combine sugar, vinegar, mustard, celery seeds, ginger, turmeric and hot pepper flakes and bring to boil. Add drained vegetables, reduce heat and simmer, stirring often until vegetables are tender, about 15 minutes.   Mix cornstarch with water and stir into relish, simmer stirring until spoon pulled across bottom of pan leaves a trail that fills slowly, about 5 minutes.
Pack into 8 or 9 500ml jars leaving 1/2 inch headspace. Process in boiling water canner for about 15 mins...or just a large saucepan if you don't have a canner.
