chicken liver pate.

400g chicken livers.
2 shallots.
4 tablespoons of double cream.
50g butter.
Whisky or Brandy (a splash)

Soak livers in milk for an hour.
fry shallots and livers with 50g butter.
add whiskey or brandy.

Bkitz in a blender add double cream.

I've tried this with both brandy and whisky and it works better with the whisky.

do the same but with softened butter instead of the cream - chicken liver parfait - only difference is in the name but either way delicious

er, yours is definitely the healthy version - mine involves half a pound of softend butter - on a healthier note it also has  tad of garlic and thyme in it   but method is identical...no cream though

have a pot in the freezer collecting chicken livers as I dress our birds until I have enough for a huge batch.  Freezes excellently and at christmas I do loads in little ramikins and sell them at the farmer markets

this is something i cannot make and get it right

the trick is to keep the livers pink - if they are over cooked the pate is grainy
