Brown Bread Ice Cream

Just had a bash at Paul Hollywood's recipe as I'd made a loaf of brown bread yesterday which turned out to be rather on the heavy side.  If anyone wants the recipe, let me know and I'll post it up.

I've not tried brown bread ice cream

75g brown breadcrumbs
60g brown sugar (I used demerara)
3 large eggs, separated
1tbsp whisky
270ml double cream
75g icing sugar

Mix breadcrumbs and brown sugar and spread evenly on a baking tray.  Grill the breadcrumb mixture until it's dark and caramelised then put to one side to cool.  When cool, break it up into smallish pieces.

Whisk the egg whites until stiff peak stage.  In another bowl mix the egg yolks with the whisky and then fold this into the whisked egg whites.

In another bowl, whisk the double cream and icing sugar together until fluffy.

Using a metal spoon, fold the whisked cream and the breadcrumbs into the egg mixture.

Put into a freezer proof container and freeze for at least 4 hours before serving.

Mine is currently in the freezer ready for after dinner tonight.  I believe brown bread ice cream goes back to Victorian times.

Another success story     I can HIGHLY recommend this ice cream - it is so creamy and gorgeous with a nice bit of crunch from the bread crumbs.  Best thing is . . . . you don't even need an ice cream maker to make it
