Banana Curd

My pigs are going to be the death of me...they are fussy little bleeders.

I was given rather a large quantity of free bananas. Will they eat them, will they heck!

So what to do with them all.... so Banana curd it was..and rather yummy it is too.

                                Banana Curd

12 ounces of sugar
1 large lemon(you need the juice and the rind)
4 large ripe bananas, they need to be ripe but not black
4 large eggs
5 ounces  butter,not margarine


Mash the bananas very well.
Prepare the lemon.
Whisk the eggs


In a double pan melt the butter, add the sugar, juice and rind of the lemon and the bananas.

Bring to a very gentle simmer and cook for about 10 minutes.

Add some of the banana mixture to the bowl containing the whisked eggs, quickly beat it, then return all to the pan.

Bring back to temperature, keep stirring, it will thicken after a while, do not let it boil.

When it is thick enough to coat the back of a spoon, ladle it into hot sterilised jars and seal.

Use it on toast or as you would lemon curd.

Oooh, sounds good, will check for flog off bananas in the supermarket.

Do you want a jar? Have more to make today, happy to wrap one up (that bubble wrap I scavenged will come in handy).

That sounds tempting - I'll have to try it.

Somewhere I've got a really easy banana cake recipe if you're really overloaded with 'nanas Frazzle. I'll look it out tonight.

Banana Ketchup is a good one for "going over" nanas too
