Anadama Bread

this bread is traditionally made with molasses but i made a southernized version by replacing the molasses with ribbon cane syrup.
2 teaspoons of active yeast with 1/2 cup warm water...set aside
cook 1/4 cup corn meal with 1/2 cup water til you get a mush ,,,add to bowl with 2 tablespoons butter and 1/2 cup syrup and blend ,,,add your yeast/water plus 1 teaspoon salt,,now add 2 1/2 to 3 cups flour making a dough ball. knead and set aside in oiled bowl til doubles,,,punch down and form a loaf,,,put in greased baking pan and let double again,,bake at 375 F for 30 minutes or til golden brown. very good warm or toasted

nothing to forgive my lady...its an honest question , which i am happy to clarify.
ribbon cane syrup is not unlike maple syrup in process (meaning the juice is cooked down and reduced , darkening and thickening) but is made from the juice extracted from sugar cane stalks. ribbon cane is a variety of sugar cane which is traditionally used in making syrup , and is different than what is grown commercially to make granulated sugar. the most well known commercial supplier of cane syrup would be a company called Steen's

Could use maple syrup? or maybe even honey?

Nice sounding recipe, I may experiment...
debbie

that looks brilliant.
will be passing on that recipe to the baker in the family (OH) I have some cane syrup that a member on here sent me from the states that he had processed himself.  Just need to look out for the corn meal now - have a feeling that may be the sticking point in north devon!

Debbie, I got cornmeal from Waitrose, Okehampton. Maybe the Holsworthy branch stocks it, if you're ever going that way.
