A Pork Butchery Course

At last! A Butchery Course in our neck of the woods.

The Course was run by Northmoor Rare Breeds along with Perky Pigs in North Lincolnshire.

The Butcher was a very nice lady called Arlene from Ruler Hall Rare Breeds.

The pigs were Tamworths, supplied by Tracey from her own herd at Northmoor.

We had a wonderful day and learned so much more than how to butcher a pig.
We were fed a great lunch of Rare Breed Roast Pork and brought home half a Tamworth butchered by us, sausages made by us, and a piece of bacon to finish curing at home.

One of the highlight conversations for me was about curing your own bacon:
"Did you use the HFW recipe for the cure?"
"Yeah"
"Crap innit?"  

They are planning more courses and, if you are in the North, I can recommend it. There are more details about the day on my Blog.

Most importantly,  we now have the knowledge, and the confidence, to butcher our own with respect and do our pigs justice

sounds great Mo - and don't forget our courses down here - no groups and complete mornings tutorial for just you with our master butcher before moving on to the whole sausage bacon ham nose to tail eaing thing

Sadly, you're just too far away for us Debbie. It would cost us an arm and a leg in fuel alone.

I only had time to take a couple and I can't post them because there are other people's children in the background - sad old world eh?
Actually, it was great to see kids there!

One of the organisers was taking pics and we've been promised copies so as soon as I have any I'll show you.
I'm hoping they have one of Steve tying the Butcher in knots, seeing as he couldn't tie a Butcher's Knot - she said he has 'string dyslexia'

That photo doesn't show how the links finished up though
When we started doing sausages I sat infront of a DVD with the sausage and kept rewinding so that I could follow how they did it

I agonised over whether or not to show myself  

There is a pic of the finished links but I've not sorted my way through them all yet.

'Twas embarassing. We were the only folk who had made our own sausages, but we hadn't linked them this way. I was not the Star Pupil
