Wrap fresh trout in three sheets of newspaper and soak in cold water.
Place on baking sheet in oven, 180ish.
Bake in oven until paper starts to go brown and slightly crisp.
Unwrap newspaper, the skin sticks to it and hey presto
one gorgeously moist and tender fish.

One point though, when the newspaper starts to brown you cut through it along the belly side from tail to head end then peel back the newspaper slowly to remove the skin which is now stuck fast to the paper.  |
