1 large onion chopped into half rings.
15 large garlic cloves roughly chopped.
3 tbs of oil
4 Chicken thighs and 2 legs. You can use breast but Its better with meat on the bone. Also pigeon and Rabbit works fine in this recipe too!!
1 Tsp of dried chilli flakes.
1 Tsp of Tumeric
2 Tbs of hot chilli powder
16 floz of rich chicken stock
2 tbs of Hot curry paste Sharwoods is good but even better to make your own.
10 Red Chillies chopped, leave the seeds in its more fun.
Handfull of fresh corriander
1 tin of chopped tomatoes

Fry the chicken in the oil until brown then set aside to drain. Remove some of the oil/fat until you have around a tsp left in the wok.
Fry the onions for around a minute then add the curry paste, make sure the onions are covered in the paste then add the stock and bring to the boil.
Lower the heat to a simmer and return the chicken next sprinkle the chilli flakes in, I normally add quite a lot but its up to you.
Now add your curry powder and the tin of tomatoes the garlic and tumeric and chopped chillies now give it a good stir and then cover and leave to simmer for about half an hour or until the chicken is cooked through and all the flavours has mingled.
If the sauce is thickening to quick just add some water.
About 10 mins before you are ready to serve and a few whole chillies as a garnish more than anything.
Sprinke over the chopped corriander and serve with rice.

Not really a curry but its nice with a ice cold beer! I am making this tonight, I will be using my Naga Chillies if I can get enough off the plants, I may have to go down the spice shop and buy some.

I took my wife to Longleat but she asleep halfway through, then I realised she had been darted.
