Does anyone know how this is done?

Have some lovely Lleyn fleeces just wondered if it would be worth having a go

I remember seeing HFW make felt. I can't remember all the details though

This has good instructions : http://gfwsheep.com/felting/felt.html.  You don't have to use a pan.  I've seen it done using this technique but on a tarpaulin on the lawn, so you can get bigger pieces.

I have done small pieces and its easy so can't imagine it would be too difficult to scale it up.  Tempted with our grey face dartmoor wool but its the prep of the wool that puts me off - cleaning drying and carding!

it's not a flat roof you want felting then, could have helped you out with that
