1 Chicken breast per person. Each lightly slashed with a sharp knife.
Citric fruit juice, you can use Lemon, Lime , concentrated Orange, Grapefruit, or any combination of them that you like.
Place the chicken in a ceramic oven dish and pour over the fruit juice. It must be a ceramic or Pyrex dish, because the citric acid will react with a metal dish giving the chicken a metallic tang to the flavour.
Leave in the fridge over night.
Place in a medium oven and bake for about an hour or until the chicken is properly cooked. Turn once and add a little more fruit juice or water if required, and add another sprinkling of powdered Coriander.
Thicken the fruit juice with a little cornflower, to make a sauce.
